Grilling deliciousness

My friends and I were feeling a bit adventurous the other day. Along side our portobello mushrooms and onion-mixed hamburgers on the grill, we tossed a few slices of watermelon and goat cheese stuffed figs. They were all so delicious, it makes me want to try grilling more fruits and different foods. My brother-in-law suggested grilling a pizza, and while that sounds delicious and tricky, I'm even more excited to try a different treat I found on a blog.

Roasted peaches with goat cheese, hazelnuts and honey. Mmm.

eveready diner


when i was in new york, we stopped at a roadside diner in hyde park my brother-in-law said he heard great things about. turns out, he heard those great things from guy fieri on the food network. eveready, a 1950s-style diner, was featured on diners, drive-ins and dives and it definitely lived up to its hype.



the atmosphere was absolutely charming and the food was even better. our waiter said eveready is most known for their ice cream and deserts so my sister had a delicious cherry coke float with a million cherries and i had a brooklyn egg creme {a combination of seltzer, whipping creme and syrup so i'm sure it was incredibly healthy}.

overall, i really loved the pace and would definitely go a lot more if i lived in the area. my sister did point out that we have out own diner, drive-ins and dives treasure in our hometown: frank's diner. i think it's about time i checked out their garbage plate.

Afternoon at Ashling

On Sunday, my sister and brother-in-law had a little lunch at Ashling on the Lough to see friends and family before they move to New York on Saturday. It was great to see friends and family that we don't get a chance to see often. {It's so difficult to get everyone together now-a-days. Especially family since everyone is at a different place in their life and most with busy schedules.} It's a pretty big restaurant and about three quarters of it were there to see Maggie and Patrick off on their new adventure.



I had only been to Ashling one time prior to Sunday but I really like it. It's an Irish pub and restaurant with an upscale, cozy feel and traditional Irish food.



I only tried the reuben but I heard from others that everything on the menu is absolutely delicious.


Don't you just love the feel of Ashling? It's great on a Sunday afternoon for lunch or for a beer on Friday night.

Our try at Indian cooking

My friends and I decided to stay in and make dinner the other night rather than go out. We all really like Indian food so we thought we'd try making a chickpea curry dish with potato pancakes. It was definitely an experience. It took quite a bit of time, but over all I think it turned out well.



The chickpea dish was delicious, absolutely delicious, even though we didn't have the best start.


Unfortunately, our potato pancakes didn't turn out too well. They tasted delicious but turned out to be more mashed potatoes than potato pancakes.


I still consider it a successful try, though I would recommend more practice.

Cooking with Friends

What's better than going out to dinner with friends? Making dinner at home with friends.

A couple of my best girls and I decided against a night at an impersonal restaurant and crowed bar for a quiet night at home- together- with a bottle of wine. Call me an old lady, but I'd much rather spend a night at home. At home where the conversation flows as freely as the wine, second helpings are always an option and no one cares if you talk during the movie.

We made a three cheese pasta dish and it was absolutely fabulous.

We are planning more dinner nights together soon. I can't wait! I just got a few new cook books with recipes that I'm dying to try.

Fourth of July Treats

Every year my dad's family gets together for an afternoon picnic on July 4th. We cook out, drink lemonade, play bocce ball, toss waterballoons, have a watermelon seed spitting contest.... we even put on our own parade. (Seriously. Most years, we even draw a decent sized crowd. It's called the 38th Street Parade.)

One of the best parts of the picnic, besides seeing family, is the delicious food. This year, I think I'm going to try making a new dessert. I've narrowed it down to these two:


Flag Cake



Ingredients

  • 18 tablespoons (2 1/4 sticks) unsalted butter at room temperature
  • 3 cups sugar
  • 6 extra-large eggs at room temperature
  • 1 cup sour cream at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 3 cups flour
  • 1/3 cup cornstarch
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda

For the icing:

  • 1 pound (4 sticks) unsalted butter at room temperature
  • 1 1/2 pounds cream cheese at room temperature
  • 1 pound confectioners' sugar, sifted
  • 1 1/2 teaspoons pure vanilla extract

To assemble:

  • 2 half-pints blueberries
  • 3 half-pints raspberries

Directions

Heat the oven to 350 degrees F.

Butter and flour an 18 by 13 by 1 1/2-inch sheet pan.

Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed, until light and fluffy. On medium speed, add the eggs, 2 at a time, then add the sour cream and vanilla. Scrape down the sides and stir until smooth.

Sift together the flour, cornstarch, salt, and baking soda in a bowl. With the mixer on low speed, add the flour mixture to the butter mixture until just combined. Pour into the prepared pan. Smooth the top with a spatula. Bake in the center of the oven for 20 to 30 minutes, until a toothpick comes out clean. Cool to room temperature.

For the icing, combine the butter, cream cheese, sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment, mixing just until smooth.

Spread three-fourths of the icing on the top of the cooled sheet cake. Outline the flag on the top of the cake with a toothpick. Fill the upper left corner with blueberries. Place 2 rows of raspberries across the top of the cake like a red stripe. Put the remaining icing in a pastry bag fitted with a star tip and pipe two rows of white stripes below the raspberries. Alternate rows of raspberries and icing until the flag is completed. Pipe stars on top of the blueberries.

I serve this cake right in the pan. If you want to turn it out onto a board before frosting, use parchment paper when you grease and flour the pan.


Red, White and Blue Trifle


Ingredients

· 1 box red velvet cake mix, about 18 ounces (if you can't find red velvet cake use 1 box chocolate cake plus a bottle of red foodcoloring)

· 1 (16-ounce) tub whipped topping

· 2 pints blueberries

· 1 pint strawberries, tops removed

Directions

Bake the red velvet cake mix according to package directions and allow to cool.

Using a serrated knife cut the red velvet cake into 1 inch square pieces and line the bottom of the trifle bowl with half of the cake squares.Using a spatula, spread about a 2-inch layer of whipped topping on top of the cake squares.Layer about 1 1/2 pints of the blueberries on top of whipped topping.Layer the remaining cake pieces on top of the blueberries forming a second layer of cake. Using a spatula, spread remaining whipped topping over the cakes pieces.

Decorate the perimeter with the strawberries; placing the strawberries cut side down. Sprinkle the remaining blueberries on top of the trifle inside the strawberry perimeter.

Cooking for Others

My brother-in-law Patrick is a chef at a classy wine and tapas place (though they also serve full meals). As the head chef, he is in charge of creating new plates and deciding the menu. This is perfect for him and my sister since he loves to cook and she's still learning.

I keep asking him to let me take over his kitchen and use it as my culinary laboratory, but it hasn't happened yet.

I'm not quite sure if others enjoy my cooking as much as I do though. I think I generally cook for my own taste and not others. I'll have to work on that, it'll be a fun experiment.

Compiling Lists

I've been compiling a reading, viewing and cooking list for quite a while now. I'm waiting for the afternoon I can curl up in a lawn chair in my backyard and read, the evening I can spend in front of my stove creating a delicious meal and the night I can lay down with a relaxing movie.
